Huo Shan Huang Ya (Huoshan Huangya) is one of the most famous yellow teas in China. It is a yellow tea but not a green tea because it is made using the Menghuang process, in which a small amount of leaves, after roasting and rolling, are piled into a pillow and wrapped with paper. The Menghuang process removes the bitterness and astringency from the leaves and gives them a creamier flavor and texture.
This Huoshan Huangya is roasted with charcoal in the final step to bring out the warmth and nuttiness of the tea.
