The tea plants are shaded with rice straw mats for 21 days, which gives the leaves a natural sweetness. This special method ensures that the aromas can develop intensively. After harvesting, the leaves are lightly steamed and then heated to a light to medium temperature to preserve the freshness and character of the tea.
