A semi-aged white tea from an altitude of approx. 600 m from Mount Tai Mu (Tai Mu Shan) in Fuding in southeast China. The Chinese name is Shoumei white tea.
What is Shoumei White Tea?
Gongmei white tea is a mixture between the harvest stages Pai Mu Tan white tea and Shoumei white tea. The first stage of harvest is Silver Needle (only the buds), then comes Pai Mu Tan (one bud and two leaves) and then Shoumei (almost only leaves).
How does this white tea taste?
In terms of taste, this aged tea is a special pleasure that cannot be compared with few other varieties. There are nuances of
Wood and fresh floral. Also is
a distinct sweetness like
Jujube dates and apricot noticeable. If you with
medicinal herbs from China familiar, you will find similar flavor elements in this shoumei as well.
Making an aged white tea
Traditional Chinese Method (Kungfucha / Gongfucha) prepare:

- 6-8 g for 200 ml
- 30 seconds for the first infusion, 20 seconds for the later infusions
- This Shoumei can be prepared Gongfucha style about 8 times.
Traditional European method:
