What does GABA actually mean?

GABA is an acronym for "gamma-amino-butyric acid" and is a compound made from glutamate in tea leaves through the action of glutamate decarboxylase. GABA occurs naturally in fermented foods like yogurt and tempeh, as well as various types of tea like green tea, black tea, and oolong tea.

Why does the tea contain a higher proportion of GABA?

When tea leaves are stored under anaerobic conditions, i.e. in a stream of nitrogen or carbon dioxide without exposure to air, and brewed like regular tea, many GABA compounds are produced. The Japanese Gaba green tea and the Taiwanese Gaba Oolong are particularly famous for this.

How does Gaba Oolong taste?

Gaba Oolong are characterized by a distinct, somewhat difficult to describe taste. Not all Gaba Oolong taste the same, but they still have similar taste nuances that characterize the "Gaba" taste. This taste can best be described as a certain fruitiness that leaves a round, soft and creamy mouthfeel.
