2022 pre-Qingming Pai Mu Tan (White Peony) Weißer Tea

This slice of Pai Mu Tan white tea was made in Spring 2022 Harvested and pressed in Tai Mu Mountains in Fuding, Fujian Province China, the birthplace of white tea. The tea was made according to the principle "a bud and two leaves" picked. The buds are large with white fur, the young leaves are small and complete. The dry tea smells very flowery, because it was only picked a few months ago and is still very fresh.

This Pai Mu Tan white tea will not be bitter even if you let it steep a little longer. For this tea we recommend the Chinese gongfu style cooking method. 

    1. It is best to use 8 grams of white tea leaves in 200 ml of water, leave to steep for about 20 seconds. The water should not be hotter than 75 °C.
    2. With the Gong Fu preparation, the Pai Mu Tan white tea can at least 8 times be brewed.
    3. Young Pai Mu Tan smells like a green meadow full of spring flowers. The first infusion tastes smooth and sweet like morning dew, the second juicy like young melon, and the sweetness becomes less floral in the following broths and more like honey or syrup.

    Frisch und Würzig

    Dieser weiße Tee kommt dezent aber abwechslungsreich. Über alle Aufgüsse hinweg bleibt der Tee sehr frisch, mit einem Hauch gemähten Grases. Zu beginn kommt das ganze mit Aromen nach getrockneten Früchten ähnlich eines Hong Oolong. Danach schließen sich Aromen an, die mich eher an einen Grüntee erinnern, die Früchte werden frischer und leichter. Bei späteren Aufgüssen kommen dann würzigere Noten durch (Zimt, Kokos, Waldmeister), die mich fast an einen Darjeeling denken lassen. Trotzdem bleibt der Charakter eines weißen Tees. Auch über den achten Aufguss hinweg bleibt der Geschmack erhalten, wenn man die Ziehzeit und Wassertemperatur erhöht. Schade, dass es den Tee nur in 8g Portionen gibt.
