The Sencha is from the 2021 harvest, harvested mechanically in the 3rd week in April, shaded for 7 days.
Aroma: fresh like a summer melon with green vegetable notes
Taste:
Refreshing, nutty and sweet if you brew the tea at 60°C for no more than 15 seconds. The tea is reminiscent of freshly cooked asparagus, which has a very nutty flavor. Powerful taste with a long aftertaste, slight bitterness like orange peel.
Preparing the Sencha:
60-70 °C

When brewing, make sure that the tea water is not hotter than 70 °C for no longer than 20 seconds. The longer you steep the tea, the more intense its umami will be.
